How to Decorate a Dining Room for Easter | Lemon Pudding Cupcakes
I have a sweet and elegant cupcake table for Easter Sunday all ready to impress your guests. This would also look great for any Spring party. We’ll get started by doctoring up a cake mix to make some lemon pudding cupcakes. Then I’ll share a few decorating ideas to give those cupcakes a floral theme. Here’s how to make a cake mix better. We’re going rogue and not really following the directions on the back of the box. We’ll use 1 box of vanilla cake mix. The box asked for 3 eggs, but adding 1 extra egg here will make it a fluffier batter. Instead of the suggested amount of water, I switched it out for milk. Then I added 1 box of instant vanilla pudding. And 4 small single serve packets of lemon Crystal Light. Whenever I am making a vanilla based cake mix, I like to use almond oil instead of the standard vegetable oil, because it makes it taste like a wedding cake. It makes the flavor much more rich.

1 box vanilla cake mix
4 whole eggs
3/4 cup milk
1 box vanilla pudding
4 single serve packets Crystal Light
1/2 cup almond oil
Cupcake liners and/or ice cream cones

Large Marshmallows
Premade Icing
Sugar
M&M candy
Chocolate Sprinkles
Itty Bitty Pretzels
directions to bake cupcakes
Blend all ingredients.
Pour batter into muffin liners (or ice cream cones).
Bake at 350 degrees for 20-24 minutes.

If you want to add some dimension to your cupcake display, bake some cupcakes in ice cream cones and some in regular cupcake liners. Varying the height will add some visual interest to your tablescape.
All the cupcakes don’t have to look the same. Using different colored sprinkles, and changing out the icing piping tip will only make this Spring cupcake display even more festive. Here are a few ideas.

To get the marshmallow flowers on top, you will need some clean scissors.
All I did is cut the large marshmallows in half and the sticky part is where the sugar will stick to the marshmallow. By putting a little icing on the cupcake first, the marshmallows will stick down nicely.
I filled the center of the flowers with some Easter candy I found at the Dollar Tree. And on some of the others I used Cake Craft Sprinkles, which look like little pink spheres. I finished with a leaf piping tip to create a few leaves where there were empty spots.
Here’s a tip if you don’t have the right color of sugar for the top of those cupcakes. Place some sugar in a ziplock bag, add the gel food coloring and then seal the bag and shimmy it around. You can make any color of sugar topping this way by mixing and matching those food gels.

For these cute little butterflies, I used some Snyder’s Itty Bitty Minis pretzels for the wings. I found the candies at Dollar Tree and then used 2 chocolate sprinkles for the antenna’s. Aren’t these the cutest?!

Now we are ready to get that dining room table decorated for Easter using these cupcakes! The first step for any new tablescape in my dining room is to give the table a good clean. I like the Method Wood for Good Daily Cleaner. I got that cleaner at Target, which is also where I found these flowers. I ended up just using one of these. I also pulled out my Easter decor that I used last year, like some moss, moss bunnies and a crystal cake platter.
After placing everything, this looks like the epitome of a Spring meadow filled with bunnies, flowers and….cupcakes. Because that’s the kind of meadow I want hang out in!
