Eggnog Recipe | Christmas Cupcakes
It’s always crazy busy around the holidays, yet with guests coming over, you still have to find the time to put something yummy together. Keep reading for an easy eggnog cupcake recipe. This eggnog cake is so delicious and easy because we make this eggnog cake recipe with yellow cake mix! You will find this to be the best and easiest eggnog cake from mix, so let’s get right into this tree winter cupcake DIY! I also did a video that you can check out below.

Ok, let’s get right into this. We are going to use a box mix, but play around with the instructions to make these ultra festive eggnog cupcakes. Instead of water, we are going to substitute eggnog. I used the Southern Comfort Vanilla Spice Eggnog. Now, don’t get excited this eggnog wasn’t spiked, although had it been, I bet that would have been tasty. The eggnog will make the batter a little more thick and fluffy than a usual cake mix, but don’t worry about that, I promise they come out just fine.

Now for the frosting. We are going for a winter themed forest, so I made a few shades of blue icing. I used buttercream, but a cream cheese flavored frosting would work well with the eggnog cupcakes, too.
To get the tree shape base, I used an ice cream cone and broke off the edge to create a flat surface at the bottom. I did some taller than others to vary the heights of the trees.

So, now we have our delicious eggnog cupcakes and we just need to dress them up. I added a little white frosting to represent snow on the ground and also hold that ice cream cone in place. I used a little glitter type sprinkle to add some sparkle to the icing. Then I piped that blue icing onto the cone and decorated it with some gold sprinkles.
