Healthy Chicken with Artichoke Recipe
I have an easy chicken recipe for dinner with few ingredients. It is a delicious and healthy chicken with artichoke recipe. I think it’s the best baked chicken with artichoke and I am going to use marinated artichokes, but you can use just regular non-marinated if you want. // Artichoke Chicken bake
Ingredients
3-4 Chicken Breasts
1 can or jar of artichoke hearts. You can get the marinated ones or the plain
1/2 Cup plain Greek yogurt
3 Tbs parmesan cheese
1 Tbs capers
1 Tbs minced garlic
Instructions
Pre heat the oven to 425F.
Spray a baking dish with baking spray and place the chicken in the dish.
Combine the rest of the ingredients and pour on top of the chicken.
Bake for 30-35 minutes
While this was baking I threw together a healthy side salad. I had some spinach, added some cucumbers, grape tomatoes, mushrooms, and hard boiled eggs in there and then topped with salt and pepper. I used some yogurt dressing which is light at only 35 calories per serving.
Next, I plated the chicken breasts and the greek yogurt turned into a very flavorful sauce, so I made sure to use a big spoon to scoop some of that on top.
