Potato and Onion Bake

Ingredients

  • 1/3 cup olive oil

  • 2 large onions, thinly sliced

  • 1 teaspoon rosemary leaves

  • 2 pounds potatoes, thinly sliced

  • 1 teaspoon salt

  • Salt and pepper

  • 1 cup chicken broth

 

directions

  1. First, you will Preheat your oven to 350F. 

  2. Grease a shallow 6-cup baking dish.

  3. Heat the oil in a saucepan over medium heat. Add onion and cook until soft and golden brown, about 20 minutes, stirring occasionally.  

  4. Remove from heat and stir in rosemary.

  5. Arrange one-third of the potatoes in prepared pan. Top with one-third of the onions and sprinkle with salt and pepper. Repeat the layers twice, ending with onions. Pour the broth over the top. Cover with foil and bake 1 hour.

  6. Remove the foil and bake 15 to 20 minutes, until golden brown.
